Black Bean Brownies!


It’s February and as much as we love delicious traditional Valentine’s Day brownies, we didn’t want all our hard work at the gym to be destroyed by one pan of chocolaty goodness. So instead, Karly set out to find a yummy yet healthy alternative!

Surprise!! Black Bean Brownies!
And the best part is, they are gluten free and vegan! Oh wait, actually the best part is they are absolutely delicious!

Here’s what you will need to make them for yourself:

One 15oz can black beans (drained & rinsed very well)
2 1/2 tbsp cocoa powder
1/2 cup quick oats (gluten free if desired)
1/4 tsp salt
1/3 cup agave syrup (you can use honey for non-vegan)
2 tsp vanilla extract
1/4 cup coconut oil or vegetable oil
1/2 tsp baking powder
2/3 cup chocolate chips
optional: extra chocolate chips to put on top

Preheat oven to 350 degrees Fahrenheit.

Combine all ingredients except the chocolate chips in a mixing bowl. Grab a stick blender and blend until smooth. This step  takes a bit of time and can get messy if your not careful. A food processor would be much easier if you have one. Once the batter is smooth, stir in the chocolate chips and then pour into a greased 8×8 pan. This is where you can sprinkle those extra chocolate chips on top. Bake for 18-20 minutes. A great indicator to know they are done is to use a toothpick. If it comes out clean, they are done! Let cool for 30 minutes before trying to cut.



Oh my dear goodness gracious! We loved them and so did our Valentine’s! They didn’t even suspect… BEANS! And we’re not going to tell them either. ☺

It was the perfect combination with our coffee this Valentine’s Day morning. ☺
